Kimchi

Just like when you have kids or siblings, you’re not supposed to have a favourite. But let’s face it; everybody does. This is hands down our favourite ferment so far. It is citrusy, sweet, tart, spicy and bursting with flavour. It can compliment or add life to almost any dish. Our kimchi is vegan, and so can be enjoyed by anyone. And if you’re a hardcore ‘Fish sauce must be in it to make it real kimchi’ person, we ask that you please give this one a try before making the judgement call, because it’s delicious. Every single ingredient in this kimchi is a powerhouse in its own right. Combined and fermented, it becomes a force to be reckoned with in terms of health benefits. Promoting immune function, regular bowel function, promoting brain and skin health, as well as having anti-inflammatory, anti-aging, anti-cancer, anti-obesity is to name a but few of the health properties of this product. It is loaded with vitamins, minerals and probiotics.

This sauerkraut is stunningly vibrant in colour, and subtly delicious in flavour. It consists of only three ingredients: purple cabbage, caraway seeds and Himalayan salt. The caraway seeds give it a delightful mild anise flavour that goes incredibly well with the classic slightly tangy and sour taste of sauerkraut. Not only that, caraway seeds, which are full of antioxidants, have been used for thousands of years as a digestive aid, and studies have established that they are very effective in reducing digestive issues, including those associated with IBS, which falls in harmony with the already well-known health benefits of sauerkraut.

Carrot & Ginger

We call this the gateway sauerkraut. If you are not used to eating ferments, this is the one we recommend you try first, unless of course, you don’t like carrots or ginger, because aside from salt, that’s all there is to this product. Carrots – one of the sweetest vegetables out there – are absolutely loved by all the probiotic bacteria that reside in fermented foods, and as a result, this ferment contains one of the highest amounts of probiotics out of all our ferments. The added warm, zesty, oh-so-slightly spicy ginger pairs incredibly well with the carrot to create this vibrant mouth-watering sauerkraut.

Carrot, ginger, sea salt.

This sauerkraut is a colour and flavour bomb. The added turmeric in this white cabbage ferment gives it the colour of the sun, and it will liven up any dish that it’s added to. Prepare your nostrils for this one, the added onion and garlic give it a strong smell. But don’t be afraid, the depths of flavours that come in this sauerkraut will leave you wanting more every time. The coriander seeds in this ferment, we think, are the cherry on the cake; each time you bite into one, you get a tiny burst of complex flavour that goes so well with the rest of this sauerkraut.

Ingredients

White cabbage, garlic, onion, tumeric, coriander seeds, sea salt.

It doesn’t really get any more classic than this: white cabbage with fennel and juniper berries. If you are not too familiar with sauerkraut but try to conjure one to mind that you may have seen in a shop, this is probably the one you will think of. And it’s popular for good reason. The distinct piney bittersweet, peppery flavour of juniper goes hand in hand with the warm, sweet taste of fennel. Mix it in with the classic sour and salty taste of fermented cabbage and you’re onto a winner. Both fennel and juniper berries exhibit anti-inflammatory and anti-oxidative properties, and are rich in vitamins, minerals and fibre.
