It doesn’t really get any more classic than this: white cabbage with fennel and juniper berries. And it’s popular for good reason. The distinct piney bittersweet, peppery flavour of juniper goes hand in hand with the warm, sweet taste of fennel. Mix it in with the classic sour and salty taste of fermented cabbage and you’re onto a winner.
